The sisters who get up at three

Their dad started Clayton's Bakery in a barn in 1991. Today his daughters run it, and the starter is still the same one.

The morning bake: the oven is fired up with wood at three.

When Joseph Clayton rented the barn behind his house in 1991, he had one oven and his grandmother's recipe. Today six people work at the bakery and the bread goes to six shops in the area.

“In thirty years our starter hasn't died once.”

Their flour comes from the mill in Bainbridge, they add no improvers to the rolls, and their little shop on the square has a queue every morning.
